Abstract

Attention to a healthy lifestyle is becoming increasingly popular among different age groups of the population, which in turn leads to an increase in the demand for "healthy food" products, including products with a low fat and sugar content, but with a high dietary fiber, vitamins, and minerals. The need to enrich products with biologically active substances and dietary fiber is a key condition for the development of food products and culinary dishes that meet the needs of the modern consumer.
